Singapore Recipe for Mango Pickle


INGREDIENTS

  • 500g green mango (peeled & sliced 1/2 cm thick)
  • 1 1/2 tbsp salt

    Ingredients for Sugar Syrup
  • 1 cup water
  • 250g sugar
TIP: If you prefer a hotter and spicier version of this dish, add in about 5 to 6 whole chillies in the jar.

To prepare:

  • In a large bowl, combine the unripe mango and salt
  • Let marinate for at least 1 hour, stirring occasionally till liquid is drawn out and mango becomes limp
  • Wash marinated mango with boil water
  • Drain using a colander
  • Leave mango to dry for about 30 mins to 1 hour
  • Using a pot, bring sugar and water to boil
  • Stir to dissolve all sugar
  • Take off heat and allow to cool
  • Pack the mango into a glass jar and fill till syrup covers the mango
  • Allow mango to pickle for 2 days before eating
  • This dish will keep well in the refrigerator for several months
