Green rice (Arroz verde) is absolutely love accompanied with any grilled fish or meat or serve alongside a
simple stew.
Mexican Green Rice (Arroz Verde) - Easy Mexican Recipe For Mexican Starter Course
- 2 cups long grain rice (uncoverted)
- 1 can Mexican green tomatoes (drained)
- 1 clove garlic
- 1 large chile poblano - fresh or canned (cut into strips)
- 2 tbsp butter
- 1/4 cup parsley leaves (chopped)
- 1 small onion (chopped)
- 4 cups chicken stock
- 2 tsp cumin
- 1 bay leaf
- salt & pepper to taste
You can turn this into a main dish by adding 1 lb scallops or shrimp (or a combination of both)
5 mins before the rice finished cooking.

How to make Green Rice (Arroz Verde):
- In a food processor, process the green tomatoes
- Add in parsley, (save a bit for garnish) garlic and chili
- Blend and process for a few seconds till pureed
- Melt butter in a pan, add chopped onions and saute till onions is wilted
- Add rice to pan, mix in and saute till rice turns golden
- Add pureed mix into rice and cook over medium heat for 5 mins
- Add chicken stock, cumin, salt & pepper and bay leaf
- Bring to a boil
- Cover and lower heat to simmering, cook for 20 mins or till liquid ois absorbed
- Discard bay leaf
- Serve with chopped parsley
