Spicy Pork Roast - Easy Mexican Recipe For Mexican Pork Dish
- 2 lbs pork boneless loin roast
- 1/4 cup sugar
- 1 tsp dried oregano
- 2 tsp chilli powder (add more for more heat)
- 1/2 tsp black pepper

How to Make Spicy Pork Roast:
- In a bowl, combine sugar, chili powder, oregano and pepper
- Rub dry ingredients into pork, making sure all surface is covered
- Cover and refrigerate for 30 mins
- Heat the oven to about 325 degree
- Place pork, fat side up, on a rack in a shallow roasting pan
- Insert meat thermometer (the tip should be in the thickest part of the pork, not resting in the fat)
- Roast uncovered for about 2 hours or till thermometer reads 160 degrees
- Remove from oven, cover with aluminium foil and let meat rest for 5 mins
- Slice meat and serve
HINT: Marinate this pork dish overnight for best results.
