Cinnamon Shortbread Biscuits - Easy Mexican Recipe For Mexican Dessert
- 1 cup self-raising flour
- 1/2 cup plain flour
- 1/3 cup almonds (toasted)
- 150g butter (softened at room temperature)
- 1/4 cup sugar
- 1/2 tsp ground cinnamon
- 1 egg
- 1/4 cup raw sugar

How to Make Cinnamon Shortbread Biscuits:
- Preheat oven to moderate
- Brush an oven tray with melted butter or oil, line base with greased paper
- Combine the plain and self-raising flour in a food processor and pulse for a few secs
- Add in almonds, raw sugar, butter and egg
- Process for 1 min or till mixture comes to form a dough
- Form 3 level tbsp of the mixture into balls
- Flatten the balls between the palms of both your hands (to shape round biscuits)
- Place on prepared tray
- Sprinkle biscuits with sugar and cinnamon
- Bake in oven for 10 mins
- Cool on a wire rack before serving
Excellent to serve with a hot Mexican drink like
Chocolate Drink or Champurrado or
Mexican Coffee.
