Cinnamon Shortbread Biscuits - Easy Mexican Recipe For Mexican Dessert

  • 1 cup self-raising flour
  • 1/2 cup plain flour
  • 1/3 cup almonds (toasted)
  • 150g butter (softened at room temperature)
  • 1/4 cup sugar
  • 1/2 tsp ground cinnamon
  • 1 egg
  • 1/4 cup raw sugar

How to Make Cinnamon Shortbread Biscuits:

  • Preheat oven to moderate
  • Brush an oven tray with melted butter or oil, line base with greased paper
  • Combine the plain and self-raising flour in a food processor and pulse for a few secs
  • Add in almonds, raw sugar, butter and egg
  • Process for 1 min or till mixture comes to form a dough
  • Form 3 level tbsp of the mixture into balls
  • Flatten the balls between the palms of both your hands (to shape round biscuits)
  • Place on prepared tray
  • Sprinkle biscuits with sugar and cinnamon
  • Bake in oven for 10 mins
  • Cool on a wire rack before serving
Excellent to serve with a hot Mexican drink like Chocolate Drink or Champurrado or Mexican Coffee.
